ANSWER: The Revolation 2 (Rev2) is our most popular tempering machine (by far!). The Rev2 has the following features that the Rev1 does not:

• Overnight pause
• Digital temperature display
• Manual temperature adjustment
• Temper 2 feature (brings chocolate up to temper point, drops down a few degrees and brings the temp back up - for perfect temper conditions).
